Savory Roasted Parmesan Red Potatoes

We LOVE red potatoes at our house!  They are delicious & oh-so-healthy!  Pay close attention to what you put on your potatoes though. It doesn’t matter if they’re practically fat-free and free of cholesterol if you slather them in sour cream, cheddar cheese or butter. Yes, they always taste better with those tasty additions, but next time try high-flavored, lower-fat cheeses like Parmesan or Romano, so you can get the taste without paying the price!  My Savory Roasted Parmesan Red Potatoes will knock it out of the park at your next dinner!

-Did you know: A banana has 9% of your daily needs in terms of potassium. A red potato has almost 20%!!?

-Or that baked, mashed, or boiled, red potatoes actually provide more energy-delivering complex carbohydrates than a cup of pasta!!? 


Much of the nutritional value of a potato is found in its skin & red potatoes are particularly healthy because of their thin, nutrient packed skins. They are loaded with fiber, B vitamins, iron and potassium! Half of the fiber of a potato comes from the skin & with red potatoes in particular, the skin is already super thin, so it doesn’t detract from the taste or texture!  I can’t stress it enough, LEAVE THAT DANG SKIN ON!!

Hint: Use red potatoes with the skins in mashed potatoes and add peas, beans, carrots and other veggies, and call it “Confetti Mashed Potatoes”!

You’d be amazed at what the difference the name of a food makes to kids lol!  My mother used to put blue food coloring in milk & call it “Blue Moo Juice”.  I hated milk, but drank her concoction because….HELLO!  Who doesn’t like juice! 🙂

Savory Roasted Parmesan Red Potatoes


12 small red potatoes unpeeled and quartered

Quartered Red Potatoes

3 Tbsp olive oil

2 Tbsp dried italian herbs

1 Tbsp Worcestershire sauce

1 tsp minced garlic

1/2 tsp paprika

1 tsp salt

1/4 tsp black pepper

1/2 cup grated parmesan


Preheat oven to 400 degrees.

In a large bowl, mix together all ingredients & toss potatoes until evenly coated.

Spread potatoes in a single layer on a foil lined pan with the skins down.

Bake, uncovered, for 45 to 50 minutes or until sufficiently golden brown;)


I have used this recipe time & time again & it’s a winner!  Easy to prepare & once it’s in the oven, there is no turning or stirring of the potatoes.  Just let the oven do the work for you so you have time to do more important things, such as, drinking a glass of wine!! 😉

These potatoes are divine on their own, but for those who MUST have the sour cream adorning their taters, go ahead!  I won’t judge you;)  DIG IN!!!
