Torsk! What in the world does torsk mean you say? Torsk itself means “cod” in Swedish, Danish, & Norwegian. It is also a cod dish in Scandinavia that is poached then broiled. I am always looking for good fish recipes besides the trusted ol’ fish n’ chips! This recipe will impress even the pickiest fish eater! It’s nice and firm with a flavor that some have said resembles lobster! That alone should make you want to try this out;) Continue reading Oh. My. COD. That’s Good!

We LOVE red potatoes at our house! They are delicious & oh-so-healthy! Pay close attention to what you put on your potatoes though. It doesn’t matter if they’re practically fat-free and free of cholesterol if you slather them in sour cream, cheddar cheese or butter. Yes, they always taste better with those tasty additions, but next time try high-flavored, lower-fat cheeses like Parmesan or Romano, so you can get the taste without paying the price! My Savory Roasted Parmesan Red Potatoes will knock it out of the park at your next dinner!
-Did you know: A banana has 9% of your daily needs in terms of potassium. A red potato has almost 20%!!?
-Or that baked, mashed, or boiled, red potatoes actually provide more energy-delivering complex carbohydrates than a cup of pasta!!?
Much of the nutritional value of a potato is found in its skin & red potatoes are particularly healthy because of their thin, nutrient packed skins. They are loaded with fiber, B vitamins, iron and potassium! Half of the fiber of a potato comes from the skin & with red potatoes in particular, the skin is already super thin, so it doesn’t detract from the taste or texture! I can’t stress it enough, LEAVE THAT DANG SKIN ON!!
Have picky eaters in your home that won’t eat their veggies?
Hint: Use red potatoes with the skins in mashed potatoes and add peas, beans, carrots and other veggies, and call it “Confetti Mashed Potatoes”!
You’d be amazed at what the difference the name of a food makes to kids lol! My mother used to put blue food coloring in milk & call it “Blue Moo Juice”. I hated milk, but drank her concoction because….HELLO! Who doesn’t like juice! 🙂
My Savory Roasted Parmesan Red Potatoes are easy to make & ready in no time for the dinner table. See the recipe below & make them tonight!
Savory Roasted Parmesan Red Potatoes
12 small red potatoes unpeeled and quartered
3 Tbsp olive oil
2 Tbsp dried italian herbs
1 Tbsp Worcestershire sauce
1 tsp minced garlic
1/2 tsp paprika
1 tsp salt
1/4 tsp black pepper
1/2 cup grated parmesan
Preheat oven to 400 degrees.
In a large bowl, mix together all ingredients & toss potatoes until evenly coated.
Spread potatoes in a single layer on a foil lined pan with the skins down.
Bake, uncovered, for 45 to 50 minutes or until sufficiently golden brown;)
I have used this recipe time & time again & it’s a winner! Easy to prepare & once it’s in the oven, there is no turning or stirring of the potatoes. Just let the oven do the work for you so you have time to do more important things, such as, drinking a glass of wine!! 😉
These potatoes are divine on their own, but for those who MUST have the sour cream adorning their taters, go ahead! I won’t judge you;) DIG IN!!!

The first year, the spears will be teeny-tiny. Each year they will thicken & will continue to produce for up to 20 years!! Talk about the gift that keeps on giving;) Continue reading Plant Once & Harvest for 20 Years!
The sweet potato!! Yes, we’ve all heard about how nutritional these brightly fleshed potatoes can be, but just how do you cook it? In my opinion, a sweet potato is already sweet enough without being drowned in brown sugar & marshmallows! Although there isn’t anything wrong with liking them that way, I like mine a bit more savory. A savory sweet potato? Oh yes…you need this in your life! Once you try this recipe, you’ll worship me…don’t worry, I’ll let you;) Continue reading These Stuffed Sweet Potatoes are Calling Your Name!!
Every family has a killer oatmeal cookie recipe hidden away & my friend Linda shared hers with me the other day. It was amazing as I knew it would be because it was somewhat similar to MY family’s recipe as well! Funny how good cooks tend to think alike! After eating myself to shame on her delicious cookies I started thinking about different spins I could put on this ol’ favorite. My husband LOVES cookies with nuts & doesn’t tend to like big chunks of chocolate in his cookies. Weird, I know! I’m still working on him, but really, there are some of us that like our cookies just a tad bit less sugary. That doesn’t mean it has to lack in the yum department though! I have seriously found the best combination for an out of this world oatmeal cookie! Brace yourself for the….Oatmeal Cocoa Seed Cookie!! Don’t judge it till you try it! Continue reading Oh-Yeah!!
