There I was staring at 2 giant sacks of unshelled sunflower seeds! They were given to me as a gift & I had been looking at them for a week trying to think of what to do with them. Once I started using them in my recipes, I was hooked! So versatile with a beautiful nutty flavor & that irresistible crunch!! There are so many ways to enjoy these little goodies, but today I’m going to share my quick & easy “Sassy & Spicy Sunflower Seed Recipe”! Delicious, nutty, and crunchy sunflower seeds are a delicious snack! Not only are they high in energy, but they are one of the best sources of health benefitting nutrients, minerals, antioxidants, and vitamins!! Add some spice in there & you have yourself a metabolism boosting wonder snack!!
In the past, I have grown my own sunflowers to harvest the seeds. This is a GREAT idea as long as you can get to them before the birds do!! Those sneaky birds seem to know just exactly when the heads are ready for harvest;) Normally, I would use seeds with the shell on for this recipe, but since I was spoiled with the gift of shelled sunflower seeds… I’ll take it!!
My Sassy & Spicy Sunflower Seeds are quick & easy to make! Packed full of flavor with a nice kick to them. They are addicting to eat & hard to put down!!
5 cups shelled sunflower seeds
2 1/2 Tablespoons coconut oil or olive oil
2 Teaspoons pink himalayan salt or sea salt
1 1/2 Teaspoons powdered garlic
1 Teaspoon ground black pepper
1 Teaspoon sriracha sauce
1/2 tsp. cayenne pepper
1-Preheat your oven to 350 degrees F.
2-Prepare 2 baking sheets by lining with foil.
3-In a small bowl, melt the coconut oil in microwave & stir in the seasonings.
4-Toss seeds in the oil & seasoning mixture and spread evenly onto baking sheets.
5-Bake in the preheated oven for 15 minutes or until golden.
Let them cool first before serving.
When roasting, your mouth will begin to water. This is normal;) The smell radiating from your oven will be down right heavenly!!!
*Store your roasted sunflower seeds in an airtight container in the refrigerator to make them last longer;)
Just a handful of sunflower kernels a day provides much of the recommended level of phenolic anti-oxidants, minerals, vitamins, and protein. They are a great snack & easy to make yourself! Stop buying the ones from the store that are full of ingredients that no one can pronounce & make your own. You’ll know exactly what’s on them!

•Grind & make into flour for “Sunflower Bread”.
•Sunflower seed butter is a great alternative for peanut butter as well!
